At ProWein 2024, owner Mr. Niko Schmitt will have two ice wines from two different vintages on his stand alongside some Riesling wines, which have now become a rarity. The special thing about ice wine is that the grapes have to be harvested and pressed at sub-zero temperatures, ideally at minus 8 degrees. It is not easy to predict how the weather will develop and whether the low temperatures will be reached in any given year. As the grapes for making ice wine have to be frozen and pressed in this state, all the grape's ingredients are concentrated. This does not only apply to the sweetness, the aroma and acidity are also concentrated. As a result, ice wine is very strong in concentrated form.
